Ok, it's not Sole on tonights menu- but Salmon. It is one of the most popular types of fish in this country and it's not hard to see why. Even ignoring the fact that it tastes so good, it's super duper healthy. Omega-3 fatty acids are really important to include in a balanced diet as they are not just good for your heart but they also help to regulate your cholesterol triglyceride levels. I know that 'triglyceride' is a bit of a big word- all you have to know is that Omega-3 fatty acids do the same job as Statins (but better!). In addition to keeping your ticker and cholesterol doing what they should it also helps with all of these:

General brain function

Memory

ADHD

Depression

Crohn's Diesase

Rheumatoid arthritis

Osteoporosis

And that isn't all....Salmon is a great source of high quality protein (keeps you going) and vitamins and minerals (including the holy Omega-3 but also potassium, selenium and vitamin B12).

So what are we going to do with this piece of wonder fish for dinner? Noodles, petit pois and spices. When the fish is that good there is really no need to over fuss it and hide all of the flavour. The salmon should be the star of the show so noodles and petit pois provide the perfect back drop for this drop dead gorgeous supper.
