Love it or Hate it? Marmite takes on Chicken…

I know that Marmite/Yeast Extract is a controversial ingredient that most families have somewhere in their cupboards, in our house we get through it by the bucket! As Mum cant eat gluten we cant buy the ‘Marmite’ brand, but many of the supermarket own label ‘Yeast Extract’ is just as good- and gluten free (and yes, I still call it Marmite). Being a household of Marmite fiends we add it to more than just toast…

Had we had better weather today I would have done the thighs on the Barbie, but in true English style- its raining. I love a good BBQ as its pretty much a meat-lovers heaven and my marmite chicken thighs do an excellent job of hitting that meaty-savory spot. However, its just as good baked in the oven if- like me- you’ve been rained off. It may sound a bit batty smearing chicken in such a strong flavor, but once it hits that open heat- beautiful things happen, trust me…

It is such a simple recipe and goes beautifully with roasted red pepper and potato salad.

BBQ’d Marmite Chicken Thighs (Serves 4)

Ingredients

4 Chicken Thighs-boneless, skinless.

25g Marmite

2 Tbsp Olive Oil

1 Garlic Clove (crushed)

Method

  • Mix the Marmite, olive oil and crushed garlic clove in a dish

  • Trim any gross bits off the thighs and dunk them into the marmitey-garlicy bowl of loveliness.

  • Pop them back in the fridge for anywhere between 2-6 hours.

  • Fire up your Barbie (or oven to 180) and simply cook them through, trying to get a beautiful char on the outside.

Potato Pepper Side (Serves 4)

Ingredients

350g Small Salad Potatoes (a jersery royal is my preference)

1 Tbsp Olive Oil

1 Garlic Clove

350g Sweet Peppers

70g Rocket

Method

  • Thinly slice your potatoes into discs and boil them until they are cooked through, but still holding their shape.

  • Slice up the peppers and place them in a bowl with the olive oil and a finely chopped garlic clove, coating all of the peppers in oil.

  • Transfer the peppers onto a baking tray and cook at 180 until they have softened and started to catch slightly.

  • Combine the cooked potatoes, peppers and rocket in a bowl and serve it alongside the chicken (or any other meat dish for the matter). You can serve the potato, rocket and peppers separately (like I did tonight, because I am lazy!)
